When Paranormal Pizza suffered a fire at the shop on New Street in Bethlehem, brothers Marc and Joe Kubushefski were looking at using their food truck to get through the winter as they started work on their new location on Third Street.
However, the owner of Jay’s Local, Lyell Scherline, welcomed Paranormal Pizza into the Allentown restaurant space for pop-ups on Fridays and Sundays. Since November, Marc and Joe have been churning out their vegan pizza and other creations to their extensive fan base.
Jay’s Local is no stranger to these pop-ups, as it has been used as an incubator location for many small businesses testing their concepts before continuing their business.
